Beef & Greens Stew
2 LBS beef, cubed
4 TBS oil
1 large onion, chopped
3/4 C tomatoes, diced
3 garlic cloves, grated
1 TBS ginger, freshly grated
1 TBS salt
1 red bell pepper, seeded & chopped
1 jalapeno chili, chopped
5 to 6 C water
1 bunch spinach leaves, coarsely shredded
1 bunch watercress, coarsely shredded
1 bunch mustard greens (with flowers), coarsely shredded
White rice (for serving; optional)
Heat oil in a large cooking pot. Add onion and sauté over medium heat until translucent, about five minutes. Add the cubed beef and cook for fifteen minutes, stirring occasionally. Add garlic, ginger, jalapeno chili, red bell pepper and tomatoes. Bring to a simmer and cook for fifteen minutes. Add water, and bring the mixture to a boil. Add greens. Reduce heat to a low simmer, cover and cook for about one hour, or until the meat is tender.
Suggestion: Serve with white rice.
