1 LB pork (use chops or roast), cut into bite-sized pieces
1 LB beef (use chuck steak), cut into bite-sized pieces
1 bottle (75ml) port wine
3 slices dark bread, diced
4 potatoes, peeled & thick-sliced
1/2 C cream
4 TBS butter
Salt & black pepper to taste
French bread (optional)
In a large cooking pot, sauté pork and beef with 1/2 C port wine over medium heat for about five minutes. Add sliced potatoes. When potatoes begin to turn golden in color, add cream, remaining port wine, butter, diced dark bread, salt and black pepper. Simmer over medium-low heat, uncovered, for about thirty minutes, or until meat is fully cooked and mixture has thickened.
Suggestion: Serve with slices of crusty French bread.
