Sudanese beef & potato stew
4 onions, chopped
4 TBS tomato paste
1/3 C vegetable oil
3 cloves garlic, crushed
1/2 LB beef steak, chopped small
3 C water
3 tomatoes, chopped
1/2 green bell pepper, chopped
1 tsp. salt
1 tsp. cardamom
1 tsp. cinnamon
2 potatoes, peeled & chopped
Peel and chop potatoes. Cook in a skillet with a little oil until potatoes are golden. Set aside. Heat oil in a large skillet or wok; add onions and cover. Cook over medium heat, stirring occasionally. Add water; cook for five to ten minutes or until water is nearly evaporated. Add tomatoes, steak, bell pepper, salt, cardamom and cinnamon. Cover and simmer for three minutes. Add tomato paste. Stir in water until mixture is smooth but thin. Add cooked potatoes. Cover and simmer for about ten minutes, adding more water if necessary. Stir in crushed garlic. Serve.
