Eritrean beef stew in tomato sauce
3 TBS butter
1 onion, chopped
1 can (28 oz.) whole tomatoes, chopped
2 garlic cloves, chopped
1/2 TBS Berbere spice
1 LB beef stew meat (cubed small)
Salt & black pepper to taste
Melt butter in a skillet. Sauté onions for about five minutes; add tomato, garlic and Berbere spice. Add cubed beef and cook for about ten minutes. Season to taste with salt and black pepper; cook for fifteen minutes, or until the meat is tender.
Suggestion: Serve with Taita flatbread.
