Kyoto Iced CoffeeKyoto Iced Coffee

Place water into a cooking pot over high heat; remove from heat just before water begins to boil. Line a Chemex coffeemaker with a filter; fill with ground coffee. Slowly pour almost-boiled water over the grounds; make sure all grounds are soaked. Allow the coffee to drain until regular dripping stops; remove the filter and used grounds. Serve with milk and/or syrup. Recipe makes enough for one serving.

Iced Coffee Syrup (for Kyoto Iced Coffee)

Combine instant coffee granules with the hot water; stir until dissolved. Add the condensed milk; mix well. Store in an airtight container or jar in the refrigerator until ready to use.

*About Chemex (from their website): The Chemex coffeemaker is a one-piece, hourglass shaped vessel made of high quality, heat resistant glass. The traditional model comes with a polished wood collar and leather tie. The collar serves as an insulated handle around the middle of the coffeemaker. The Chemex coffeemaker produces a clear, pure and flavorful brew without bitterness or sediment. The coffee only comes in contact with the scientifically designed filter and non-porous glass. Because of its purity, Chemex-brewed coffee can be covered and stored in the refrigerator for reheating without losing its flavor.
