Grilled Meat Loaf
1-1/2 LBS ground chuck or sirloin
1/2 C seasoned breadcrumbs (dry)
2/3 C chili sauce (divided)
1/3 C grated onion
1 egg
1/2 tsp. black pepper
1/4 tsp. salt
2 TBS packed light brown sugar
1 TBS spicy brown or Dijon mustard
Prepare grill for direct cooking. In a large bowl, combine the beef, breadcrumbs, 1/3 C of the chili sauce, the onion, egg, black pepper and salt. Mix well. On a cutting board or cookie sheet, shape meat mixture into a 9x5 oval loaf, about 1-1/2" thick. In a small bowl, combine the remaining chili sauce, brown sugar and mustard; mix well. Set aside.
Place the meat loaf on the grill; cook covered over medium-hot coals for about ten minutes. Carefully turn the meat loaf over using two large spatulas. Brush the chili sauce mixture over the top of the meat loaf. Continue to grill (covered) for ten to twelve more minutes for medium-well, or until desired doneness is reached.
Let stand ten minutes before slicing.
