1/4 C pine nuts, ground (use mortar & pestle)
1/2 C cornmeal
1/4 C flour
1 tsp. salt
1/2 tsp. cayenne pepper
1/4 tsp. paprika
1/4 C vegetable oil
1 LB catfish filets
2 TBS pine nuts
In a bowl, combine ground pine nuts with cornmeal, flour, salt, cayenne pepper and paprika. Heat vegetable oil in a large skillet over medium heat. Dredge the catfish filets in cornmeal-flour mixture. Pan-fry filets for about four minutes on each side, or until fish is opaque. Sprinkle with additional pine nuts before serving.
