Winning Recipe

The online recipe contest was a grand disappointment, even with the prospect of a free gift basket looming on the horizon. I came to the conclusion that people must not be interested in receiving free gifts even if they have to work just a tad to get them.
Whatever the case, the free gift basket was awarded to LaRue Bloomquist for her original recipe for Toscakaka (Swedish Almond Cake). LaRue lives nearby and she was quite enthusiastic about contributing to the effort. In addition, her recipe is absolutely divine and very easy to prepare.

Toscakaka (Swedish Almond Cake)
1/2 square butter, softened
1 C sugar
2 eggs, beaten
1 tsp. almond extract
1 C flour
In a bowl, combine softened butter and sugar. In a separate bowl, beat eggs. Add almond extract to beaten eggs. Pour into butter and sugar mixture. Add flour, and mix well until batter is smooth. Pour into a greased 8" pie plate or cake pan. Sprinkle slivered almond on top of cake mixture. Bake at 350-degrees F for twenty-five to twenty-seven minutes. I sampled some of the cake over Christmas and was very impressed. Not overly sweet, the Swedish Almond Cake was melt-in-the-mouth delicious. I'm not one to rave about dessert dishes very often as I prefer savory foods, but the wining recipe is well-worth the minimal effort to prepare and gives over an enjoyable reward.
