1/4 C garlic, sliced (about 10-15 cloves)
4 C frozen peas
2 C vegetable broth
Salt & black pepper to taste
2 TBS chives, finely chopped (use fresh or dried)
2 TBS olive oil (sub with canola oil)
Dollops of plain yogurt or sour cream (optional)
In a large saucepan, add oil over medium-high heat. Add garlic; sauté until browned. Add peas, vegetable broth, salt and black pepper. Bring to a simmer. Cook, uncovered, for about fifteen minutes or until peas are tender. Remove from heat. Using a slotted spoon, remove one cup of peas. Transfer remaining mixture to a blender or food processor; puree until smooth. Add puree back to saucepan; mix in reserved peas. Ladle portions into individual serving bowls. Top with chives and a dollop of plain yogurt or sour cream. Serve.
