5 to 7 cloves garlic, peeled & sliced
Olive oil
1 C water
2 C chicken broth
Salt & black pepper to taste
Day-old French bread (optional)
Eggs (optional)
Sauté the garlic in a small amount of olive oil in the bottom of a soup pot. Add the water and simmer for fifteen minutes. Add the broth, salt and black pepper to taste. Simmer for thirty minutes, stirring occasionally. If using eggs, drop them whole into the soup. Pour soup into individual bowls, with the eggs on top.
Suggestion: Serve with chunks of French bread.
Trivia: Garlic Soup is said to be a traditional hangover cure.
