Swedish Fish Soup
1-1/2 LBS cod filets
Pinch of white pepper
2 bell peppers, de-seeded & diced
3/4 LB butternut squash, peeled & diced
2 C whipping cream
1 leek (white part only), finely shredded
1 TBS butter
1 TBS flour
1 tsp. salt
1 tsp. dried thyme
1 TBS white wine vinegar
Heat butter in a skillet; add the bell peppers, squash and leek and fry for two to three minutes. Sprinkle flour on top; stir to blend. Season with the salt and thyme; pour in white wine vinegar and whipping cream. Bring to a simmer; add fish. Cover and simmer gently for about six minutes, or until the fish is tender. Garnish with sprigs of thyme.
Suggestion: Serve with boiled red potatoes.
