Swedish Fish Soup

Heat butter in a skillet; add the bell peppers, squash and leek and fry for two to three minutes. Sprinkle flour on top; stir to blend. Season with the salt and thyme; pour in white wine vinegar and whipping cream. Bring to a simmer; add fish. Cover and simmer gently for about six minutes, or until the fish is tender. Garnish with sprigs of thyme.

 

Suggestion: Serve with boiled red potatoes.
