Ukrainian Dumplings
3 eggs
Pinch of salt
1-1/2 C flour (add more flour for thicker batter)
1/3 to 1/2 C water
4 to 5 oz. butter, melted
4 to 5 C broth or soup
In a bowl, beat the eggs until smooth. Add the salt. Gradually add melted butter and flour to form a thick batter. Bring either soup or broth to a boil. Wet a large spoon into the boiling liquid; cut batter into large rounds with spoon on a board. Drop into the boiling liquid. Cook the dumplings until they float to the top of the broth. Remove to a serving dish with a slotted spoon; butter dumplings lightly.
Suggestions: Serve dumplings with sour cream, or with soup or broth.
Variation: Roll cooked dumplings in seasoned breadcrumbs; fry in butter until outside is crispy.
