Dumplings
3 TBS shortening
1-1/2 C all-purpose flour (if using self-rising flour, omit baking powder & salt)
2 tsp. baking powder
3/4 tsp. salt
3/4 C milk
In a bowl, cut shortening into flour, baking powder and salt with a pastry blender until the mixture resembles fine crumbs. Stir in the milk. Drop dough by separate spoonfuls onto hot meat or vegetables boiling in a stew. Cook uncovered for about ten minutes. Cover and cook ten minutes longer. Serve hot. Variations: Cheese Dumplings (add 1/4 C shredded sharp cheddar cheese with the flour) or Parsley Dumplings (add 3 TBS snipped parsley or chives with the flour).
