Polish Dumplings
3 eggs
1 TBS. butter, melted
Salt to taste
3-3/4 C flour
Water
1/3 tsp. baking powder
3 slices of bacon, diced
6 oz. grated cheddar cheese
In a large bowl, beat eggs; add the butter and salt. Beat mixture again. Add the flour and enough water so mixture stirs easily with a spoon. Stir constantly for about five minutes, and then add baking powder. Drop dough with a spoon into a large cooking pot full of salted, boiling water. Cover and cook for about five minutes, or until insides of dumplings are no longer sticky. Remove dumplings from water with a slotted spoon. Sprinkle with grated cheddar cheese. Serve hot.
