Emirian Spice Mix
1/4 C black peppercorns
1/4 C cumin seeds
1/4 C coriander seeds
1 TBS cloves
1 TBS green cardamom pods
3 dried chilies, stemmed
2 cinnamon sticks, broken in half
1 whole nutmeg, broken into pieces
1-1/2 TBS ground ginger
1 TBS ground turmeric
Using a spice grinder or mortar and pestle, grind spices one at a time until finely-ground (except for ground ginger and turmeric). Transfer mixture to a bowl; stir in ground ginger and turmeric. Recipe makes about one cup. Store in a sealable container in a dry place; will keep for up to one year.
Uses: Sprinkle into meat dishes, soups and stews such as Dhal (boiled lentils), Kheema (fried ground beef) and Thareed Laham (flatbread layered with lamb stew). Bzar is sometimes blended with clarified butter for extra flavoring.
