Omani Spice Mix
1 TBS ground coriander
1 TBS ground cumin
1/2 tsp. ground cinnamon
1/2 tsp. black pepper
3 whole cloves
1 tsp. turmeric (for yellow coloring)
Combine ingredients and store in a sealable container in a dry place.
Uses: Meat rub, seasoning for rice dishes, soups (Shurba), or meat and vegetable stews such as Djaj Fouq El-Eish (chicken & rice stew). The spice can also be used in bean and lentil dishes.
Bzar (Emirian Spice Mix).
