Kuwaiti spice blend
1/2 C black peppercorns
1/4 C coriander seeds
1/4 C cassia (Chinese cinnamon)
1/4 C cloves
1/3 C cumin seeds
2 tsp. cardamom seeds
4 whole nutmegs, grated
1/2 C paprika
Place peppercorns, coriander seeds, cassia, cloves, cumin and cardamom seeds in blender and grind to a powder. Grate nutmeg and blend into spices with ground paprika. Store in a sealable container in a dry place. Note: If you don't have a blender, use a mortar and pestle to grind spices.
Uses: Buharat is typically used in Middle Eastern recipes, such as Dijaj Machboos (Kuwaiti Chicken with Rice).
