Zucchini with Onion

In a large skillet, heat 1/4 cup of the olive oil over medium heat. Add garlic and onions and cook, stirring often, for about five minutes. Decrease heat to medium-low and cook for about fifteen minutes, or until onions are soft and translucent. Heat remaining 1/4 cup olive oil in another skillet over medium heat. Add zucchini and cook, stirring often, for about fifteen minutes, or until zucchini soften and release their juices. Remove from heat and drain liquid released during cooking. Transfer zucchini to the skillet containing onions and garlic; season mixture with salt and black pepper to taste. Add the oregano and cook over medium heat, stirring often, for about five minutes to blend flavors. Break eggs over the vegetables and cook on medium heat for about five minutes, or until egg whites are set. Remove from heat and serve.
