Rice, Beef & Vegetables
1/2 LB boneless beef chuck, cut into 1/2" cubes
2 TBS oil
1 tomato, sliced into large pieces
6 scallions, sliced thin
1/2 LB mustard greens, chopped small
1/2 LB spinach, chopped small
1 bundle watercress, chopped small
2 C water
1 C white rice
Salt & black pepper to taste
In a large cooking pot, sauté the boneless chuck in oil until the meat is browned on all sides. Add the tomato pieces; cook on low heat with the tomatoes and beef for about ten minutes. Add the scallions, mustard greens, spinach and watercress. Simmer covered, until the vegetables are tender, stirring occasionally. Add two cups of water, or just enough to cover the vegetables. Then stir in the rice, salt and black pepper. Cover the pot again, and simmer slowly until the rice is fully cooked and most of the liquid has been absorbed.
Note: Vary Amin Anana is typically eaten with Sakay.
