Thai Fried Rice
2 TBS peanut or vegetable oil
4 to 8 garlic cloves, minced
1 C fresh button mushrooms, sliced
2 C cooked white rice
2 scallions, cut into 1/2" slivers
1 medium tomato, finely chopped
2 tsp. bottled fish sauce
1 tsp. soy sauce
Fresh coriander (for garnish)
Lettuce (for garnish)
Lime wedges (for garnish)
Add the oil to a wok and heat until very hot. Add the garlic and stir-fry until golden, about twenty seconds; stir in scallions and tomato. Add the mushrooms and cook until softened, stirring constantly, for about one minute. Add the cooked rice with the fish sauce and soy sauce, breaking up the rice with a wooden spoon. Cook for approximately two minutes, stirring constantly. Turn the rice onto a dinner plate; garnish with fresh coriander.
Lay a row of overlapping cucumber slices around the rice, along with the slivered scallions, tomato slices and one or two lettuce leaves with wedges of lime. Serve.
