Leftover Fried Rice
1 TBS vegetable oil
1/2 C onion, chopped
1/2 C celery, thinly sliced
3 C cooked white rice (or use leftover)
1/2 C cooked ham or chicken, diced (or use leftover)
1/2 C leftover cooked vegetables (broccoli, carrots or peas)
Soy sauce, to taste
Heat vegetable oil in a skillet over medium. Sauté the onion and celery for a few minutes; add cooked white rice and stir. Add the diced ham or chicken and cook; stir to heat through. Sprinkle with soy sauce and serve. Recipe makes about 3-4 servings.
