Chickpea Crepes
2 C water
2 tsp. salt
2-1/4 C chickpea flour
1/4 C olive oil (plus 2 TBS)
Preheat oven to 425-degrees F; also preheat broiler. Place water and salt in a large bowl. Add the chickpea flour, whisking constantly, until well mixed. Stir in olive oil and let stand for about thirty minutes. Grease a cast-iron skillet with 2 TBS olive oil; pour in the batter. Place under broiler for two to four minutes, or until batter is slightly blistered. Remove and place in the oven; bake for two to four minutes, or until batter is firm. Remove from oven and cut into squares. Serve.
