French Fries with Gravy
5 medium potatoes, peeled & sliced
Ice water
4 C vegetable oil (for frying)
1 can (10.25 oz.) beef gravy
2 C cheese curds
Peel and rinse potatoes. Cut into 1/2" thick slices, then slice diagonally into1/4" strips. Soak in a bowl of ice water for about twenty minutes to draw out starch. Drain and repeat. After draining the potatoes a second time, pat dry with paper towels or a dish towel. Pour beef gravy into a saucepan; warm over medium-low heat, stirring occasionally. Heat vegetable oil in a heavy skillet or deep fryer to 375-degrees F. Add potatoes in small batches and cook until golden in color, about five to six minutes. Drain in a large bowl lined with paper towels. Place the fries on a serving platter; sprinkle cheese curds on top. Ladle gravy over the fries and cheese; serve.
Variations: Add cooked chicken or hamburger to topping; use shredded mozzarella cheese in place of cheese curds; substitute marinara for gravy or use barbeque sauce in place of gravy.
