Baked Potatoes with Mojo Pepper Sauce
2-1/2 LBS small potatoes
2 TBS coarse sea salt
Water
Mojo Picon (Red Pepper Sauce)
Scrub potatoes and remove any dark spots. Place potatoes in a large cooking pot; add salt and just enough water to cover. Boil the potatoes for fifteen to twenty minutes or until fully cooked. Remove from heat and drain water. Return pot with potatoes to the stove, allowing the steam to evaporate. A layer of salt should form on the potato skins. Serve hot with Mojo Picon (Red Pepper Sauce).
