Potato, Spinach & Pine Nut Gratin
1 LB potatoes, peeled & sliced wafer-thin
1 garlic clove, minced
3 green onions, thinly sliced
1/3 C cream
1 C milk
8 oz. frozen chopped spinach, thawed
4 oz. cheddar cheese, grated
1/4 C pine nuts, shelled
Peel potatoes; rinse and cut into wafer-thin slices. Spread potatoes in a large, non-stick skillet. Sprinkle minced garlic and sliced green onions evenly over potatoes. Pour the cream and milk over potatoes. Place skillet over low heat; cover and cook for about eight minutes, or until potatoes are tender. Squeeze thawed spinach dry. Add spinach to potatoes, mixing gently. Cover skillet and cook for two more minutes; season with salt and black pepper to taste. Spoon mixture into a greased glass casserole dish; top with grated cheddar cheese and pine nuts. Place casserole dish under broiler for two to three minutes or until cheese melts and topping turns golden in color. Serve.
