2 large onions, peeled & cut into rings
Ice water
1 C all-purpose flour
2 TBS all-purpose flour
1 C milk
1 egg
2 TBS vegetable oil
1 tsp. salt
Soak onion rings in a bowl of ice water for about one hour; drain and pat dry with paper towels. In a bowl, whisk together one cup plus two tablespoons of flour, milk, egg, salt and two tablespoons vegetable oil until smooth. Heat vegetable oil in a deep-fryer or large saucepan to 375-degrees F. Dip onion rings into the batter until evenly coated; arrange in a single layer on a plate. Fry the battered onion rings until browned, about five minutes. Using a slotted spoon, drain onion rings on a paper towel-lined plate. Serve.
