Mushrooms in Scallion Dressing
10 large mushrooms, quartered
5 scallions (including greens), chopped
2 TBS soy sauce
4 TBS rice vinegar
3 TBS sake
1/2 tsp. salt
Clean mushrooms with a damp cloth; chop into quarters. Place the quartered mushrooms and chopped scallions into a bowl. Add soy sauce, rice vinegar, sake and salt; toss to coat. Allow mixture to stand for about five minutes; toss to coat again.
Suggestions: Serve as an appetizer or side dish.
