Iranian fluffy rice

Wash rice in cold water; drain and place in large bowl. Add eight cups warm water and cover bowl with a kitchen towel; allow to stand for two to three hours. Drain rice after soaking time; reserve six cups of the water. Pour rice water into medium saucepan; bring to a boil. Add rice and salt; cook and stir for about ten minutes. Remove from heat and drain. Pour vegetable oil in saucepan; return rice. Add vegetable oil on top of rice. Simmer on low heat for about twenty minutes or until rice is tender. Serve. Recipe makes about four to six servings.

 

Note: Chelo is an ingredient in Chelo Kebabs (Iranian kebabs & rice).
