Iranian kebabs & rice
1 LB ground beef or lamb
1 tsp. ground cumin
Black pepper to taste
1 onion, chopped
Cooking skewers
Chelo (fluffy rice)
Combine all ingredients (except rice) in a large bowl; mix well. Using hands, form 1/4 of the meat mixture into a ball. Place ball on a flat cooking skewer; form into square shapes similar to a cigar. Repeat with remaining meat mixture. Place skewers on a hot grill; cook for about four to six minutes each side or until meat is no longer pink. Serve with Chelo (fluffy rice) or pita bread.
