Cook rice according to package directions; set aside in cooking pot. Cut carrots and beets into cubes; shred beet greens and chop onion into small pieces. Add carrots, beets, beet greens and onion to rice; mix well. Stir in a splash of soy sauce; cook mixture over low heat for fifteen minutes. Recipe makes enough for four servings.


*Culinary Trivia from Jenny Zhang: Beet-Fried Rice is a vegan dish full of fiber. In addition, beets have many health benefits. They may help lower blood pressure, boost stamina (source of energy), fight inflammation, help support mental health, support detoxification and much more. Beets are rich in folates, manganese, potassium and copper, and contain anti-cancer properties. Beets are also high in fiber and loaded with antioxidants. According to Dr. Oz, one to two cups of beet juice a day have been shown to significantly lower blood pressure.
