1 C vegetable shortening
3 C Rice Krispies cereal
1 C coconut
3/4 C icing sugar
1 C powdered milk
1 TBS ginger
1 C (or can) mixed fruit
1/4 C raisins
Melt the shortening in a pan over moderate heat. In a bowl, combine the rice crispies, coconut, sifted flour, icing sugar, powdered milk and mixed fruit. Mix well. Stir in the melted shortening.
Pour the mixture into a lightly greased baking dish, and refrigerate until firm. Cut into squares or bars for serving.
Note: The Rice Krispies (known as Rice Bubbles in Australia) breakfast cereal was created in 1927 and released to market in 1928 by Kellogg's. Rice Krispies are made of crisped rice (rice grains which are cooked, dried and toasted). The kernels bubble and expand forming very thin and hollowed out walls that are crunchy and crispy. When the cereal is exposed to milk or juices, the walls tend to collapse suddenly, creating the famous "Snap, crackle and pop" sounds. [Data Source: Wikipedia].
