Saganaki
Fried Cheese
1 LB Kefalograviera cheese
1/2 C olive oil
2/3 C flour (for dredging)
2 lemons
Cut cheese into slices or wedges about 1/2-inch thick by 3-inches wide. Moisten each cheese slice with cold water; dredge in flour. In a deep skillet, heat olive oil over medium-high heat. Add cheese slices; sear until golden-brown on both sides. Squeeze juice from lemons over the top and serve. Suggestion: Serve with pita bread for dipping.
Note: Kefalograviera is a hard sheep milk cheese with a salty flavor and rich aroma; similar to Kefalotyri cheese.
