Cypriot fried cheese

Garnish for Halloumi Taganito:

Preheat nonstick skillet over high heat. Place cheese slices on a plate; brush both sides lightly with olive oil to coat. Sear cheese slices in the skillet; one minute on first side and one to two minutes on second side. The cheese should smoke slightly while cooking; it will also soften and form a deep-brown crust. Place fried cheese on a serving plate; garnish with black pepper, oregano or mint leaves, halved cherry tomatoes and a balsamic vinaigrette.

 

Note: Halloumi cheese has been produced in Cyprus since Medieval Byzantine (AD 395–1191). The cheese is made from goat and sheep milk; it is rather dry and salty with a strong flavor and is known to melt well. Halloumi can be substituted with Asadero or Queso Blanco Mexican cheeses.
