1/4 C slivered almonds, toasted
1 can (15 oz.) peach halves in light syrup, drained
1 pint vanilla ice cream
1/2 C raspberry sauce or seedless raspberry jam
Place slivered almonds on a baking sheet; toast in a 400-degree F oven for about two minutes. Set aside. Place several scoops of ice cream in four dessert cups or dishes. Top with the peaches; drizzle raspberry sauce or seedless raspberry jam on top. Sprinkle toasted almonds on top to finish. Serve at once.
History Note: Peach Melba was created in the early 1890s by French chef Georges Auguste Escoffier (1846-1935) for Australian opera singer Nellie Melba (1861-1931).
