Mustard Sauce for Gravad Lax
9 TBS olive oil
3 TBS vinegar
3 TBS prepared spicy mustard
3/4 tsp. salt
1/4 tsp. black pepper
1/4 C sugar
1/8 tsp. cardamom
In a bowl, combine ingredients and blend thoroughly. Cover and chill sauce in the refrigerator for several hours. At serving time, beat sauce smooth with fork or wire whisk. Recipe makes about one cup of sauce.
Note: Hovmastarsas is typically served with Gravad Lax (Salmon & Dill).
