3/4 C pearl barley
1 TBS fresh ginger, finely grated
Juice and finely grated zest of 2 lemons
1/2 C honey
6 C water
Place pearl barley in a sieve; rinse under cold water until water runs clear. Place barley in a saucepan with grated ginger, grated lemon zest and water. Bring to the boil over medium heat; reduce heat and simmer for about ten minutes. Strain mixture into a bowl; discard the barley. Add honey to the mixture; stir to dissolve. Stir in lemon juice and allow mixture cool to room temperature. Pour mixture into a pitcher or glass bottles; refrigerate until chilled.
Note: Lemon Barley Water is known as a restorative for those feeling under the weather.
