Greek Christmas Cookies
1 C butter, softened
1/4 C powdered sugar
2 eggs, beaten
1 TBS brandy
1/2 C toasted almonds, chopped
2-1/2 C flour
1 tsp. baking powder
2 tsp. ground cloves
Powdered sugar (for dusting)
Preheat oven to 350-degrees F. In a bowl, cream together butter and powdered sugar until light. Add eggs and brandy, mixing well. Fold in almonds, flour, baking powder and ground cloves. Roll the dough into 1" balls (dough will be crumbly). Place the balls two inches apart on a greased cookie sheet; flatten slightly with a heavy spatula or use hands. Bake for about fifteen to twenty minutes, or until cookies are lightly browned. Allow cookies to cool for about ten minutes; roll in or dust with powdered sugar.
