Mulled Wine
5 whole white cardamom pods, cracked
1" piece cinnamon stick
1 tsp. dried orange peel or 1/2 fresh orange peel
2 TBS brown sugar
1/3 C Madeira wine
1 C red wine (or burgundy)
1/2 C raisins or 5 dried figs (optional)
1/2 C blanched almonds (optional)
Place all ingredients in a cooking pot. Heat slowly, but do not boil. Simmer for about forty-five minutes, stirring occasionally. Strain through a fine-mesh sieve to remove particles. Serve.
Note: For stronger flavor, allow the spices to steep for several hours (or overnight); strain and gently re-heat.
