Cottage Cheese Crinkles
3/4 C margarine
1 C sugar
2 eggs
2 tsp. vanilla
1 C small-curd cottage cheese
2-3/4 C flour
1/2 C dried cocoa mix
1 tsp. baking powder
1/2 tsp. baking soda
Powdered sugar
Milk (to moisten batter if necessary)
In a bowl, cream margarine and sugar until light and fluffy. Add eggs; beat well. Stir in vanilla and cottage cheese. Sift dry ingredients; blend into creamed mixture. Stir in coconut. Refrigerate dough for several hours. Shape into 1" balls and roll in powdered sugar. Place on a greased cookie sheet and bake at 375-degrees F for ten to twelve minutes. Allow to cool before serving.
