4 C water
4 tsp. dried Chamomile flowers
Honey to taste (optional)
Lemon juice to taste
In a large pot, bring water to a boil over medium-high heat. Add Chamomile flowers; cover and boil for about thirty seconds. Remove from heat and let stand for two minutes. Strain. Add honey and lemon to taste. Makes 4 cups.
Note: Chamomile flowers are members of the Asteraceae family, similar to a daisy plant. The name Chamomile is derived from a combination of French and Latin words used to describe "earth apple" or "on the ground." Chamomile flowers can be purchased at local flower, herb or organic specialty shops. They are also available at several online outlets, including Amazon.
