Pine Nut Fix

Because of Wilbert's work schedule, we celebrated Thanksgiving yesterday. It turned out splendidly. We had a nineteen-pound bird, so naturally we have enough leftovers to feed an army. I'm already planning my versions of turkey soup, turkey salad and turkey deli sandwiches. Sometimes the leftovers are better than the actual meal itself.
My father sent me a huge bag of roasted pine nuts, so I've had myself a healthy fix. The little gems are one of my favorite snacks, but I've been unable to find them where I live. It seems odd to me because we have pine trees galore surrounding the city, but I don't believe they are any pinion pine, which is where the nuts come from.
According to the Nut Factory:
The pine nut in the shell is the pinion nut and it is mainly gathered in October in southern Utah, New Mexico, Arizona and Colorado from the stone pine (pinion means pine) trees. The gathering had traditionally be an Indian activity (Navaho or Zuni, for example), but now others do it.
Nowadays pine nuts are also used in pasta sauces, vegetable dishes and some desserts. I like them roasted, and then right out of the shell.
