Wilbert and I were at Bargain Giant this morning buying Ruiz tamales when we found an over-large recipe card at the counter. It was from the site Washington Grown Chicken (now defunct).

 

I was immediately struck with a case of giggles when I saw the site's web address: http://www.cluckcluck.org/.

 

At any rate, the site contains information about Washington-grown chickens, including basic cooking methods, a nutrition chart, stats at-a-glance, a roasting chart and food safety. There is also an entire section devoted to recipes.

 

I've re-printed one of the recipes below, in keeping with the theme of Washington-state chicken:

 

Washington Salad Extraordinaire

2 whole Washington fryer breasts, cooked, cooled, skinned & boned

1 C chopped celery

1/2 C prepared French dressing

1 C mayonnaise

1/4 C chopped red onion

1 tsp. salt

1/4 tsp. black pepper

Lettuce

 

Dice chicken. In medium bowl, combine all ingredients until well blended. Chill for two hours or overnight to blend flavors. Serve on a bed of lettuce. Recipe makes four servings. Nutrition Information per Serving: 413 Calories, 31 grams protein, 8 grams carbohydrate, 28 grams fat, 715 milligrams sodium, 80 milligrams cholesterol.

Bit of Trivia: Washington state produces approximately 40,162,601 fryer chickens per year, with an average weight of 5.3 pounds. Statewide, there are more than two thousand people employed in the fryer industry. There's some food for thought!
