Halloween Recipes VI

I've taken from my own book for this installment of Halloween treats:
Eyeballs
12 hard-cooked eggs
1 can (4-1/2 oz.) deviled ham
1/3 C mayonnaise
2 tsp. prepared mustard
1/4 C sweet pickle relish, drained
12 pimiento-stuffed olives, halved
Salt & black pepper to taste
Cut eggs lengthwise into halves. Remove the yolks; place in a small bowl. Mash egg yolks with a fork. Mix in deviled ham, mayonnaise, mustard and pickle relish. Season with salt and black pepper to taste. Spoon filling into the egg halves. Garnish with olive halves to make the "eyeballs." Note: To make extra-scary bloodshot "eyeballs" use leftover ketchup packets to drizzle over the eggs to make the "eyeballs" appear more bloodshot.
I made Eyeballs a few years ago for an office party at the hospital where I once worked. They were quite gruesome-looking. The pimientos were a bit hard to handle at first, but there were no leftovers.
