What About Cucumbers?

Over the last few weeks, a friend has given me several large cucumbers from her garden. I thought there were only a few ways in which to prepare the vegetable – in salads, as an appetizer soaked in vinegar and black pepper, or as a "tea treat" (cucumber sandwiches, with the variation of minced chicken and cucumber).

 

Cucumbers are also common in sauces used in Greek food, but I haven't been whipping up Greek fare lately, so there was no help there. There are dill pickles, naturally, but I'm not up for canning this week.

 

I did a bit of browsing and found a few recipes including cucumbers: Gardening 123 has nine recipes listed (from Beet & Cucumber Salad & Orange Dressing and Cucumber Soup to name a few) and the now-defunct Cucumber Recipe File (with a slew of cucumber recipes in most categories including drinks, sandwiches, soups, salads, dips, sauces, as well as hot and side dishes).

 

The following came from Dianne McKenzie at All Recipes:

 

Creamy Dill Cucumber Toasties

1 pkg. (8 oz.) cream cheese, softened

1 pkg. (.7 oz.) dry Italian-style salad dressing mix

1/2 C mayonnaise

1 baguette loaf, cut into 1/2-inch thick circles

1 cucumber, sliced

 

In a medium bowl, mix together cream cheese, dressing mix and mayonnaise. Spread a thin layer of the cream cheese mixture on a slice of bread; top with a slice of cucumber. Sprinkle with dill. Repeat with remaining ingredients.

Now I can put the fresh cuke's to use.
