Mango Ice Cream

For the last two years I've subscribed to "Cooking Pleasures," a publication from the Cooking Club of America (now defunct). The magazine is issued every two months, and typically runs about sixty-eight pages. I've decided not to renew my subscription only because I don't feel I'm getting much from it besides five slender magazines per year. At any rate, the new issue has a recipe for Mango Ice Cream that I wanted to share.
Dessert recipes aren't my area of expertise, although I often include such recipes on Food Fare. I prefer savory food. However, there are some dishes which seem to fall into the "savory" category nonetheless. The Mango Ice Cream recipe is one of them.
The dish originated from cooking club member Kathy Ziegler.
Mango Ice Cream
2 C chopped mangoes
2 tsp. lime juice
1/2 C sugar
1 C milk
1 C whipping cream
1/4 C honey
1/2 tsp. vanilla extract
Place the mangoes and lime juice in a food processor; process until smooth. In a medium bowl, whisk together the sugar, milk, cream, honey and vanilla. Add to the pureed mango mixture; pulse until blended. Refrigerate until chilled. Freeze in an ice cream maker according to the manufacturer's directions.
I'd have to nix the honey right off because I'm allergic, but the dish sounds like a perfect summer refresher: nice, cool and smooth. I hope to try it before the end of the month.
