Kernel Corn Muffins

I usually love anything derived from cornmeal - such as Corn Fritters, Cornbread, Cornmeal Pancakes and Polenta - so Kernel Corn Muffins were right up my alley.
By chance I saw the recipe "Double-Corn Muffins" at Betty Crocker, and decided to give it a whirl. The muffins are nicely chewy and slightly sweet, even though I reduced the sugar measurement by almost half.
Very nice when eaten warm with a dab of butter.
