6 ears fresh corn, husks & silks removed
4 eggs
1/2 C flour
1/2 tsp. salt
2 C vegetable oil for frying
Remove husks and silk from corn. Scrape raw corn and juices from the cob over a large bowl. Discard cobs. Stir in eggs, flour and salt to form a batter the consistency of thin pancake batter. Heat vegetable oil in electric skillet to 325-degrees F. If using a skillet on the stove, preheat oil to medium-high heat.
Using a large spoon, drizzle pancake-sized fritters into the skillet, four at a time. Fry for about five minutes on each side, or until golden brown. Drain on paper towels; serve warm.
