Bits of Slaw & Salmon

Once in a great while I'll have a bowl of coleslaw, usually the KFC variety, but the Food Network has a nice variation on the dish that I may try this weekend:
Apple Slaw
3/4 C sour cream
1/4 C granulated sugar
3 TBS apple cider vinegar
2 TBS ranch seasoning & salad dressing mix
1 (8-ounce) package shredded cabbage & carrots
3 green apples, cored & diced
3 green onions, thinly sliced
3 stalks celery, chopped
Salt & black pepper to taste
Whisk sour cream, sugar, vinegar, and ranch seasoning in large bowl to blend. Add cabbage mixture, apples, green onions and celery. Toss to coat. Season with salt and black pepper to taste. Cover tightly and chill for twenty minutes or up to four hours. Serve cold.
Another Memorial Day goody from Food Network is an alternative to hamburgers and hot dogs:
Teriyaki Salmon Strips
1-1/2 C teriyaki sauce, divided
1 C water
10 ounces king salmon, cut into 1-ounce strips
10 bamboo skewers, soaked in water for 30 minutes
2 TBS canola oil
2 TBS sesame seeds
2 TBS green onions, chopped
In a non-reactive shallow pan, mix together one cup teriyaki sauce and one cup water for a marinade. Place the salmon on the pre-soaked skewers and marinate for ten minutes. Heat oil in a grill pan or nonstick skillet over medium-high heat. Grill the skewers for three minutes on each side for medium, or five minutes on each side for well done. Arrange the skewered salmon in a star-like pattern. Generously drizzle 1/2 cup teriyaki sauce over the skewers. Garnish with sesame seeds and green onions.
Although Wilbert and I don't have any great plans for Memorial Day weekend, the above recipe sounds as if it would be worth dragging the grill out for.
