Irish Soda Bread

The temperature in Spokane reached ninety-three degrees yesterday. There was no way I'd bake in the inferno. We're getting central air and new wiring installed next Thursday, so we had to suffer through one more blast of heat. I tend to wilt and transform into Jekyll and Hyde during summer months, so I'm anxious to have frigid air flowing into the house.

 

At any rate, this morning was nice and cool so I decided to make the Irish Spice Bread I've mentioned in previous blog entries. I was forced to make a few substitutions for lack of proper ingredients (instead of citron, I grated the peel from one orange; and I didn't have the spice mix, so I used nutmeg and fresh ginger). I also don't have a sifter at hand, so I had to make do without.

 

The only problem with the bread was it sunk a bit in the middle, but otherwise the taste was good with a hint of a ginger spice-kick. It bakes just like a carrot cake or zucchini loaf might, and this suits me just fine.

 

It's considerably cooler today (cloudy with a breeze), so I tried a slice of Spice Bread with a hot cup of coffee. Divine. The treat would also go well with a cup of tea.
