Aran Spiosral
10 oz. flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. mixed spice
1/2 tsp. ground ginger
4 oz. light brown sugar
2 oz. candied Citron, chopped (orange peel)
6 oz. raisins, plain or golden
4 oz. butter
6 oz. golden syrup
1 large egg, beaten
4 TBS milk
In a bowl, sift the flour with the soda and baking powder; add mixed spice and ginger. Add the brown sugar, chopped peel and raisins. Mix well. Make a well in the center. In a saucepan, melt butter with the syrup over low heat; pour into well in the flour mixture. Add the beaten egg and milk; mix well. Pour into a greased 2-pound loaf pan; bake in a pre-heated oven at 325-degrees F for forty to fifty minutes, or until a toothpick inserted into the middle comes out dry and clean.
Note:
Irish "mixed spice" comes pre-packaged from specialty stores, but it might be easier and less expensive to make your own: Grind together 1 small cinnamon stick and 1 tablespoon each cloves, mace, ground nutmeg, coriander seeds and allspice berries. Substitute with pumpkin pie spice or allspice.
